The Vineyard and Winemaking – Our estate vineyard is located on a special parcel in the Oak Knoll District of Napa Valley. The vineyard borders Dry Creek at the base of the Mayacamas Mountain range and is located in the largest of 10 alluvial fan belts in Napa Valley. The well-drained sandy and gravelly loam soils, in partnership with moderate temperatures, yield concentrated fruit with great flavor intensity, yet a supple mouth-feel. The vineyard is planted to three different clones of Cabernet Sauvignon.
Each of the four vineyard blocks were hand-harvested at dawn and carefully sorted by eight sets of hands. The wine is aged for 24 months in an assortment of French oak barrels that are chosen to complement the subtle nuances of the vineyard. The selection of these barrels further enhances the length, depth and complexity of this varietal and reveals a well-integrated wine that is made to last.
Tasting Notes- Plum preserves, blackcurrant compote and crème brulée abundantly greet the nose. Rich and concentrated with soft, voluptuous tannin, the palate radiates essences of jammy fruit and black forest cake. The finish is polished and long with lingering notes of espresso, dark chocolate and star anise.
Suggested Pairing: Filet Mignon, Short Ribs, Braised Meat, Seared Mushrooms
